Showing Picklist Labels vs. Values in Form Submission Notifications

We have an Email Notification as an Action on a Form.  Looks great, but the option set values are shown, instead of the labels, so we get something like "98887657" instead of "Refurbished" in the notification.  Is there a simple way to choose to show the Labels of Picklist choices instead of the Values in our Notification form actions?  (I've attached a screenshot .. in that screenshot, we would like to see something like "CEO", our option set value, instead of 925600003)
