SOLUTION! (read below)
Hi everyone, after some time speaking with Click Dimensions support and screen sharing, we weren't able to come up with a solution together.
BUT after doing more testing on my own, here is what worked:
NOTE: The landing page was done in Block Editor

1) create your forms and landing pages as required. if you have an existing form or landing page you would like to edit, do so as normal.
2) save/ save and close your design.
3) DO NOT CLICK ON PUBLISH
4) Embed your form in your landing page using the easy wizard
5) save/save and close your landing page design
6) DO NOT CLICK ON PUBLISH
If you haven't noticed, the trick is NOT to click on publish. This is what has been breaking my forms and landing pages. If you click on Publish by accident, simply edit your form and landing page and click save or save and close.
To view your landing page, look for the custom link or embed link.
REMEMBER - DO NOT CLICK ON PUBLISH.
I hope this works for others having the same issue, I have created 4 landing pages all with embedded forms with no issues. Just for fun, I did click publish after saving one design and surprise, surprise, the form did not show. I went back to edit, saved and closed (no publish) and it now works fine.
