In regards to Courtney's suggestion, the page containing your GA script that you would redirect to could just be a blank page that is the same color as the background of the page the form is on that has some text like "thank your for your form submission" on it. Since iframes normally only redirect within the frame, this would allow you to use the GA script, but it would appear as if the form had not redirected to another page and you were just using confirmation text.
